WOKSI – Potato strings.

In today’s fast-changing food market, the winners are products that combine ease of use, consistently high quality, convenience, and versatility. That’s exactly what WOKSI is: an innovative potato-based format in the form of pasteurised potato strings that look like pasta. Its culinary use is exceptionally broad because WOKSI brings together the best of potatoes and pasta. You can use it as a base for ready meals, for soups, salads, coleslaws, casseroles, pizza, frying, or boiling. WOKSI works beautifully across cuisines — from Italian classics to exotic Far Eastern-inspired dishes.

Product inspiration

WOKSI was inspired by fusion cuisine — specifically, the combination of the Chinese dish tudousi (stir-fried shredded potatoes) with the aesthetics and “sunny” colour of Italian pasta. The result is a product that works equally well in world cuisines and comfort food dishes.

How is WOKSI made?

The WOKSI production process was designed to achieve the key quality parameters: taste, uniform colour, and the desired texture.

1) Variety and raw material selection

WOKSI is made from a selected variety of yellow potatoes, chosen after testing multiple options for taste, colour, and structure. Additionally, potatoes of the right size (calibre) are used to ensure a consistent string length.

2) Modern production line

The product is manufactured on a modern processing line, adapted to the requirements of the raw material. Potatoes are washed, peeled, cut into strings, and packed. At the end, they undergo pasteurisation, which stabilises the product and makes it ready to eat straight after opening the pack.

3) Pasteurisation and process control

A critical step is pasteurisation carried out under strictly controlled parameters, ensuring batch-to-batch consistency: stable taste, appearance, and performance in use.

What is WOKSI?

WOKSI is peeled, pasteurised potato strings that can function as “potato pasta” in culinary applications. The product is vacuum-packed and pasteurised, which enables extended storage and stable performance in the kitchen. The production technology and the selection of premium potato varieties make the product highly consistent, delivering the same excellent quality every time. WOKSI strings are 5–6 cm long and approximately 4 mm in diameter, which means they not only taste great, but also look impressive on the plate in any serving format.

Benefits for chefs and foodservice

In professional kitchens, the key priorities are speed, consistency, operational costs, and reducing raw material waste. WOKSI supports all of these goals. First of all, it is ready to eat or ready to use immediately after opening, which saves a significant amount of time and labour. There is no need to peel, wash, cut, or cook potatoes in-house.

MK Agro’s advanced processing technology ensures full consistency in every batch and every pack, so chefs can be confident they will always receive a product with the same length, colour, and taste, backed by a reliable shelf life.

Thanks to pre-treatment during pasteurisation, WOKSI enables very fast service of dishes prepared with it.

When purchasing a 1 kg pack of WOKSI, a kitchen receives 1 kg of usable product, meaning losses are reduced almost to zero.

Another advantage of WOKSI is its exceptional versatility. It works perfectly as a base for main dishes, soups, casseroles, pizza, salads, coleslaws, wok dishes, frying, baking, and even street food concepts.
